How-To: Colorful Brownie Pops

DIY Brownie Pops!

Since these little brownie pops were so fun to make, I thought I’d share a quick How-To. I used rainbow nonpareils (round sprinkles) for dipping, but any candied sugar or colored sprinkles would do the trick to match your theme (mini Halloween pumpkins, anyone?)

Brownie Pops 1

Begin with a baked brownie pan (standard brownie mix or purchase pre-made Costco bites) and use a small round cookie cutter to shape lollipops. Brownie pan should be between 1/2 – 3/4″ thick for the best lollipop shape.

Add a lollipop stick (found at your local craft store) to the top of the brownie circle. The lollipop part is optional, I also made a version of these ‘brownie bites’ without the stick as a finger food dessert.

Melt white choclate chips or candy melts (generally much easier to use to coat) over a double boiler. {Double Boiler: Bring water to a boil in a deep sauce pan. Once boiling, sit bowl of candy melts on top of pan ensuring water and bowl do not touch and turn off stove. Stir chocolate constantly until chips are completely melted.}

Dip brownie portion into melted chocolate and coat with the assistance of a spoon. It’s easiest to hold brownie over chocolate and ‘pour’ melted chocolate with spoon over brownie to coat — dunking brownie results in tiny bits floating around in your chocolate.

Dip lollipop in sprinkles and coat quickly to avoid melted chocolate drippings in the sprinkle dish (use a spoon to coat all sides of brownie). Set on wax paper or in mini cupcake forms (as I did here) and serve when hardened. YUM!

My brownie bites alternative had just the tops dipped in milk chocolate and a heavy coating of colored sugar.
