A Grown Up Grilled Cheese

A little spin on the traditional grilled cheese can yield amazing results. My mom first started making little toasted goat cheese & jam sandwiches for us when we were younger, and recently when she reminded me of them I decided to revisit as a lunch time snack.

So good it’s hard to describe!

Ingredients: cinnamon raisin bread, goat cheese, fig jam, butter (for pan).

I use a square griddle and a panini press lid for toasting and smooshing. George Foreman was really on to something – anything really can be made into a flat melted yumminess. Time to start further experimenting.

I’ve been feeling a little off for the past week or so and I’ve had to move at a slower pace. Foggy head = too much forced rest time, not enough go time :). I celebrated my birthday and had a beautiful Memorial Day weekend, but laid low all around.

When in doubt for words, I often turn to my two little ones for inspiration. This series of shots on T devouring a slice of watermelon on Monday has been making me smile ear to ear!

What if we were to approach all of the good stuff in life with such enthusiasm and commitment? :)

Thank you for all of the birthday wishes! It was a great day. I’m so grateful for such amazing, thoughtful people in my life.

I’m working on a project for the girls’ room and I keep going back to hanging artwork on the wallpapered wall. I am SO in love with that wall. I hate to detract from it but I feel as though it needs something as compared to the other walls and the bookshelves, art, etc that hits at that level around the room.

I dug into a few of my favorite patterned kids rooms (see above) and thought that they might be fun to share today. Always wonderful to glean inspiration from some home run spaces. What I’m loving in most of these spaces though is that the wallpaper is art in and of itself. Unless I come across something awesome, I’m inspired now to possibly leave as is!

I’ve been chipping away at a big ‘art board’ project for the girls for I don’t even know how long. Hoping to finish it up this weekend! So excited about it. For those of you in the States, have a wonderful 3-day weekend!
