Good Eats: Maple Oat Bars

The secret to a great dessert bar is in the crust. It’s that buttery, sugary, slightly crunchy, very caramelized, melt-in-your-mouth crust that makes a dessert bar deserving of bar status. Then you can top it with whatever you’d like – oatmeal and white chocolate chips, corn syrup and pecans, apples and brown sugar, apricots and honey…

I wasn’t planning on sharing this recipe because the photos turned out a little meh (most are from my iphone – with the exception of that first one – I was in a hurry the morning of our pumpkin patch trip) but I received a few requests, and so your wish is my command.

Maple Oat Bars

Crust:

1 1/2 sticks cold unsalted butter, cubed
1 1/2 cups all-purpose flour
2/3 cup brown sugar
1/2 teaspoon salt

This is a pretty standard crust recipe. Lots of cold butter, a matching amount of flour, brown sugar, a pinch of salt. I usually run my flour through a sifter before adding it.

You can use a food processor to cut the chunks up, but I often just break everything together with my hands. Line a square baking sheet (a 9×13 brownie pan will do) with foil and cooking spray, then press your crust into the bottom of the pan.

Bake for 15-20 minutes at 350 degrees or until the crust is golden brown and cracking.

Topping:

1 stick unsalted butter, softened
1 cup brown sugar
2 cups oatmeal
Pinch salt
Pecans (optional)
Maple syrup

In a separate bowl, crumble together topping ingredients with exception of maple syrup. Lightly pat onto baked crust.

Bake for 25-30 minutes. When the bars emerge from the oven, evenly sprinkle with a light amount of maple syrup. Let cool.

Try this recipe with chocolate chips, macadamia nuts, pecans, cranberries, you name it. This crust is the perfect foundation for pecan bars if you mix corn syrup, brown sugar and pecans together as your topping. It’s all soooo good. Happy fall baking!

Everyday Stuff.

It feels a bit like fall! In San Diego, that means that I wore a sweater this morning. The air is crisp, the three trees in our neighborhood that turn color are taking on an amber tinge, and the pumpkin patch has been beckoning (though we haven’t added a single Halloween decoration to the house yet).

Beyond the usual, our week included princesses and songs, fall fruits and veggies (including persimmons! exciting), happy chickens who love the scraps, three-month-old shots of Taylor, indecisiveness about fabrics in the girls’ room that’s making me nutty, homemade maple oat bars (something to taste just like fall), a soy spice candle accompanying me at my desk (something that smells just like fall), and our annual trip to the pumpkin patch (something that feels just like fall).

Oh, and that shot of sir Bodie’s highly medicated dinner? That’s the regular these days. Despite visions of little puppies running about, we’ve decided that life is just a little crazy and he’s officially neutered. Poor guy, days in a cone are just not fun.

By the way, doesn’t Taylor mildly resemble a Cabbage Patch doll these days? Just a little bit? In only the good and adorable ways, of course.

Hallway Transformation: Liv’s Art Space

The new nursery is getting a bit tight. While making room for both girls to share this space, I’m moving all of the unnecessary ‘stuff’ out and reevaluating our toy collection ;). One of the bigger items that doesn’t fit at the moment is Liv’s art table and her adorable Little Jake chairs. This bitty station is one of Liv’s favorites so it’s not going anywhere, but we’re trying out a new location.

The hallway in the center of our house is big! Way larger than it needs to be and sometimes it feels like unused, excess space. One day the extra space will be folded into the new master bath, but for right now the hallway is also the art department.

The hallway leads right into the girls’ room so it’s a natural play place located right between the kitchen and the bedrooms.

We’re not stepping over or bumping into the table yet (check out that floor plan again to see how wide the hallway actually is), and we may still move the table back into the girls’ room when it’s finished, but for right now it’s a pretty nice little setup.

Another favorite little detail that you can see more of in this space? The art table’s dipped legs! The contrast pops off of the wood floors as opposed to the white area rug in the nursery.

More hallway details here. My favorite (other than the new art nook!) might be the transformed bookshelf with its dramatic backing.
